Though we usually save pizza partying for the weekend, Team Minnevangelist made an exception tonight for the latest collab between Minneapolis chefs Jon Wipfli and Ann Kim. Building on their previous taco/brisket mashups at Animales Barbecue and Young Joni, the longtime pals put together a limited-edition Pizzeria Lola pie featuring hatch chili salsa verde, mozzarella, sugar-cured chili peppers, red onions, cotija cheese, and unctuous chunks of smoked beef cheeks.
Don’t 😢 if you missed it — it’s just a matter of time before more “ANNimales” specials come our way. Mondays also happen to be a launch pad for experimental pies at Pizzeria Lola. Recent highlights included a chicken-bacon combo with housemade ranch and a meatball pizza rounded off with ricotta, mozzarella, provolone, Parmigiano Reggiano, and Calabrian chiles.
