Nicollet Mall fave Vincent Francoual (of Vincent A Restaurant fame) is back in the public eye after seven years as the culinary director of Cara Irish Pubs and the executive chef of The Minikahda Club.
Unlike Minikahda’s prim atmosphere and members-only menu, Francoual’s new gig is warm and welcoming — a “casual French restaurant that serves the food French families relish.” Hammering that angle home, Minnevangelist co-founder Andrew Parks writes in the March/April 2023 issue of Minnesota Monthly, is its name: Chloe by Vincent, a nod to Francoual’s top sous chef — his daughter.
Anyone who has been to a decent restaurant over the past decade knows the rules: Dial back on the tablecloths and tweezer fare while honoring one’s classical training. Francoual must have sensed this sea change with his last restaurant, which leaned into the fine dining lane but still served a memorable burger stuffed with smoked Gouda and braised short rib. That dish is back in action at Chloe By Vincent, along with another one of Francoual’s signatures: scallops with orange sauce, leeks, and fingerling potatoes.
The rest of the menu features bistro staples such as hearty cassoulet, escargot in garlic butter (pictured above), hand-sliced steak tartare, and a savory buckwheat crepe folded over umami-packed mushrooms and acorn squash with cream and port wine.
