Boomin Barbecue Just Made Your Beer Run Better

The Ombibulous parking lot is now a dine-out destination

There’s only one thing that could make Ombibulous, one of our favorite Minneapolis beer & liquor stores, better—and that’s some damn fine barbecue.

Get a load of this delectable brisket sandwich: It came from the Boomin Barbecue truck, now posted up every Thursday, Friday, and Saturday from noon till 8 p.m. (or until they sell out) in the Ombibulous parking lot. Salt, pepper, smoke, and a whole lotta patience is what it takes to get that perfectly blackened char—a staple look at barbecue joints throughout central Texas.

The Boomin truck was started by former Handsome Hog chefs Dylan Boerboom and Garrison Sherwood. (Sherwood is also behind the new local gelato brand SoFull.)

The beauty you see up top features a half-pound of sliced Niman Ranch Prime brisket drizzled with a sweet pepper sauce and piled on the softest, butteriest bun imaginable.

The Dylan-Garrison dream team also makes sandwiches with chopped brisket, pulled pork, and smoked chicken thighs; a pastrami pork cheek “smash”; Wagyu ribs; and smoked Jucy Lucys. For sides, you can pick from such classics as creamy mac & cheese, slow-braised collard greens, creamed corn, tangy pepper slaw, fire-roasted carrots, and hush puppies.

There’s a picnic table in front of the truck, so grab a few cans at Ombibulous and make a night of it. Just note: The menu changes daily; always check Boomin’s Instagram before heading over if you have a hankering for something specific.
